T&T Story

“Baking since 2014”- It all started with ‘Sugar Sweet Soph’ baking wedding & special occasion cakes at the age 0f 14.

Experiencing & learning her trade Soph ended up at the Gold Coast perfecting her skills & qualifying as a pastry chef at age 16. Not long after moved back to her home town to open her own Patisserie at 20 years of age..

Tins & Trays, established 2020!

The idea of Tins & Trays is to enjoy quality high end food, whilst supporting our local farmers. We use all local produce when possible, showcasing the quality of the valleys farmers produce through our authentic menu. Amongst the walls on an old Queenslander built in 1906 you will find many antiques displaying the history of the house & also the town.

“Growing up on a farm taught me how produce is grown & that fresh is best! My parents being Organic farmers has shown me the importance of using raw natural ingredients. Supporting local is a massive part of T&T, as if it wasn’t for the local farming community I wouldn’t be able to have the opportunity of using the best quality ingredients for my business. Hard work has always been taught by my parents growing up & that your dreams are a possibility- so here I am today living the dream i’ve always dreamt!”

The Patisserie offers a breakfast & lunch venue which is dine in or takeaway service plus a vast variety of veinnoiserie and pastry products.

Whilst everything is made on site, Soph’s Nan also makes a few giftware items, including her pickles.

“My Nana taught me how to cook- every afternoon after school I would ride the motor bike across the creek to her house & cook delicious sweets. Nan would take my sister and I to school- but first, custard made from scratch for brekky was always a must! I learn a lot of skills through Nana & her best kept recipes! Which is why she still makes her famous pickles for us, and I still use some of her recipes thought out making products for the shop”

“My idea of Tins & Trays is to show how much I love my job and to support the locals around us. From “Farm to plate”.
